Highlight of Fribourg, the Gothic Cathedral was begun in 1283 over an earlier church from before the 1157 founding of the city. It took two centuries to complete. It was a parish church until 1512, then a collegiate church until 1945, when it became the Cathedral of the diocese of Lausanne, Geneva and Fribourg.

As evening falls on 6 December, St Nicolas rides a donkey through the Old City to the cathedral. The student bishop gives a speech reviewing the year in city and school. The procession then goes to the school for a festive meal. This custom originated in the 18th century and was revived in the early 1900s. Similar traditional celebrations take place other places in Canton Fribourg.
