Poltava Honey Gingerbread
Recipe from Vladimir Markaryan who makes wonderful carved cookie molds, available on Etsy
I haven’t yet tried this recipe—if you do, please tell me how it went and what suggestions you might have!
Tip from Vladimir: Before putting the dough into the mold, treat the mold with sunflower oil so that it absorbs into the mold, then the cookies will easily fall out of the mold.
200g (1 cup)sugar
60g (1/3 cup) water
100g ( 1/2 cup) honey
100g ( 1/2 cup) butter or margarine
600g (4+ cups) flour (200 rye 400 wholemeal)
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cardmom or coriander
1 1/2 teaspoon soda
pinch of salt
Melt sugar over low heat in a frying pan until it forms a smooth liquid mass;
Carefully add hot water and mix;
Add honey and mix;
Add butter or margarine to melt and mix;
Add spices, salt, and soda;
Cool for 5-10 minutes;
Add eggs and mix;
Add flour and knead the dough.
Chill 2-24 hours in the refrigerator (less with butter that will get too hard to work).
Bake at 350° for 10-15 minutes, or until lightly browned.
