These cute Saint Nicholas cookies are made with a special two-piece cookie cutter and stamp set from Etsy.
Ingredients
1 cup butter, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
3 cups flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
Directions
- Preheat oven to 375° (190°C)
Line baking sheets with parchment paper. - Cream butter and sugar until fluffy.
Beat in egg and vanilla.
Mix dry ingredients and add gradually to butter and sugar mixture until dough forms.
Dough may be crumbly—you may need to form it with your hands. - Roll dough 1/4-inch thick on a floured surface,
I use a pastry cloth and rolling pin cover.
1/4-inch rolling pin guides keep the dough even, good for these cookies.
If dough is too soft, chill for 30 minutes. - Dip cutter in flour, press into dough, leaving in place.
Dip stamp in cornstarch, tap off excess; dip again for each cookie.
Press stamp inside cutter.
Press on both sides of stamp, too, to get a good clear impression.
Lift stamp up; then cutter; cookie will drop out of the cutter; place on cookie sheet.
Repeat for each cookie. - Bake 8 - 10 minutes, until edges are lightly golden.
- Cool on pan for 5 minutes, then put cookies on wire rack to finish cooling.
- Makes 28 3-inch cookies.
